This my absolute favourite salad to make. Its easy to prepare and I love the different textures and flavours that make this an ideal starter or even a light lunch on lazy, summer days. The first time I made this salad I shared it with NiQi and the girls from the Spice of Life recipe group. Since then I made this salad numerous times and tweaked it quite a bit. The best variation I did was by adding chickpeas. A quick salad dressing with hummus and mayo and lemon juice complemented the salad nicely and added in a bit of a Middle Eastern flair.
The date cigars can be made in advance and kept in the freezer. Just bake or fry (if you feeling naughty) as needed. The cigars also make a lovely dessert, just serve with a scoop of vanilla ice cream.
